One new research has found that the coconut oil, the olive oil and the butter are much healthier for cooking than the refined vegetable oils. The vegetable oils release harmful chemicals that can trigger the onset of cancer and also other life-threatening conditions in the long run. According to this team of researchers, some of the most dangerous substances are the aldehydes, the chemicals linked to dementia, cancer and heart issues.
The professor Martin Drootveld says that the amount of the toxic aldehydes in the fish & chips fried in vegetable oil is even 200 times higher than the allowed limit. Butter and olive oil, and even the lard were found to release far less aldehydes compared to the vegetable oils.
It was found that the coconut oil is the healthiest for cooking at high temperatures and it releases the lowest amount of the harmful chemicals.
Dr. Stein from Oxford University says that the sunflower oils may trigger some changes in the human brain. He claimed that according to the NHS, the vegetable oils were the best cooking choice and that the butter and lard should be avoided for that purpose.
But, professor Grootveld from De Montfort University in Leicester and many other health experts don’t agree with this statement. The professor Grootveld claims that vegetable oils are a health hazard as opposed to the butter, which is much healthier choice for cooking.
He added that the vegetable oils are highly refined which means they are subject to complex chemical processes, which results in accumulation of numerous harmful chemicals. And that is the main reason why the fried food is very harmful for consumption.
