Gluten-free Vegetarian Chickpea Sandwich Filling

-1 (19 ounce) can garbanzo beans, drained and rinsed
-1/2 onion, chopped
-1 stalk celery, chopped
-1 tablespoon lemon juice
-1 tablespoon mayonnaise
-salt and pepper to taste
-1 teaspoon dried dill weed

Rinse and drain chickpeas. Pour the chickpeas in one medium size mixing bowl and mash with a fork. Mix in onion, celery, mayonnaise (to taste), dill, lemon juice, salt and pepper to taste.

You can serve this tasty sandwich spread on pita bread or crusty whole grain rolls, with tomato and lettuce. Also other raw, chopped vegetables can be substituted for the celery. And of course your favorite salad dressing can be substituted for the mayo.
